Co-Owner — Sourcing & Quality Control

Sam is the obsessive behind the quality — the one who drives the relationships with fishermen, reviews the provenance of every delivery, and refuses to stock anything that doesn't meet the Tsukiji standard. If Sam approved it, it's excellent.
